What wood for projects?

I was woundering what sort of wood is best for the projects in the fundamental course.
Where i life in the Netherlands the woods wich i can reasonably easy buy are : pine,beech,mahoganie and oak (there are more sorts but not in my neighbourhood).
What sort of wood would the Japanese use for this kind of projects?
I am new here and to Japanese woodworking so i can use all the advice and information possible.
